Superfood - Sprouts

Although long considered a hippie food, sprouts really are a superfood loaded with vitamins and minerals. In fact Captain Cook, yes the same one who "discovered" Hawaii and was then promptly eaten by the natives, helped keep his crew safe from scurvy with a variety of vitamin C-packed sprouts. Sprout varities include brocolli sprouts, lentil sprouts, alfafa and wheat berries. Sprouts can be used in sandwiches, soups, breads, and salads. They are high in vitamin C, antioxidants, saponins (good for the heart), as well as minerals, proteins and enzymes. It's easy to sprout these superfoods yourself. All they require are a sprouting bag or jar and a few days to sprout. Green thumbs are not a prerequistite.
